    some extent, the diet of the Provenqal. The heavy English cooking, and above all the strong alcohols consumed at home, must be vigorously abjured. Light beverages, fish, fresh crisp, newly cut salads, with plenty of the oil for which the country is noted, French bread; and in fact as far as possible, the native dishes, the native style of cooking are more suitable. The inhabitants of a country invariably know best what is best suited to their climate. It is because the English too often fail to carry out this maxim that they find their digestive faculties impaired and the cost of living dearer than they had anticipated. SHOPS. It would be expedient to secure a complete outfit of clothes before leaving England, as the shops at Hyeres are of a modest description so far as articles of general wear are concerned. From this rule we should except boots, which are always better anywhere out of England; and it is high time that English ladies should cease to offend the artistic taste of their foreign critics by the notorious inelegance of their ill fitting boots and shoes. There are in the Hyeres shops a few specialties that will attract the visitors. The sunshades are cheap, serviceable, sometimes elegant and always indispensable. The walking sticks and canes made with the branches of the palm trees, twisted and polished, are peculiar; fancy articles made with olive wood are less rare. There is some pretty china, and the rough Provencal pottery is wonderfully cheap and artistic. The large green water jugs which the peasant women carry are most picturesque, and worth from fourpence to sixpence. The jars for flowers, the table water jugs, and many other articles are remarkable; while the earthenware cooking uten- sils, stewpans and saucepans from a penny to sixpence each, according to size, are most useful, and it is easier to cook in them than in the more expensive metallic implements of the North.
